How to Make Creamy Tuscan Chicken Pasta

  • 2 Tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 lb boneless skinless chicken breast
  • 1/2 tsp Salt
  • 1/8 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 garlic cloves
  • 3 cups baby spinach
  • 8 oz sun-dried tomatoes in oil drained
  • 3 cups heavy cream
  • 1/2 cup Parmesan cheese
  • 1/2 lb penne pasta

  • 4 - Small Chicken Breasts or 2 Large, Butterflied
  • 1 Tbsp (20ml) - Unrefined Olive Oil
  • 1 tsp (3g) - Onion Powder
  • 1 tsp (3g) - Garlic Powder
  • 1/2 tsp (1.5g) - Paprika
  • Seasoning To Taste
Tuscan Sauce
  • 1 Tbsp (14g) - Clarified Butter or Regular Unsalted Butter
  • 1 - Brown (Yellow) Onion, Diced
  • 6 - Garlic Cloves, Minced
  • 1 Tbsp (35g) - Tomato Paste
  • 100g (3.5oz) - Sun-Dried Tomatoes, Roughly Chopped
  • 1 tsp (1g) - Dried Oregano
  • 1/2 tsp (1.5g) - Paprika
  • 100ml (100g) - White Wine or Chicken Stock
  • 180ml (3/4 Cup) - Chicken Stock
  • 400ml (410g) - Thickened Cream (Heavy Cream)
  • 60g (2.1oz) - Parmesan Cheese, Freshly Grated
  • 10g (0.3oz) - Basil, Roughly Chopped
  • 120g (4.2oz) - Baby Spinach
  • Seasoning To Taste

Instructions

Season and cook the chicken

  1. Season the chicken tenders with salt and pepper on both sides.
  2. Fill a large cast-iron skillet with the olive oil and cook both sides of the seasoned tenders over medium-high heat.

Chop the chicken adn set aside

  1. Now set them aside to cool, then dice them up into cubes.

Make the creamy Tuscan sauce

  1. Now make the sauce by sautéing the butter, minced garlic, sun-dried tomatoes (oil drained) and spinach over medium heat.
  2. Once the spinach has wilted, add the cream and let it come to a simmer.
  3. Now remove from heat and add the salt, pepper, Italian seasoning, and grated Parmesan cheese.

Add chicken and pasta in the sauce

  1. Then add your cooked hot penne pasta and cubes chicken back in. Give it a quick stir and serve.
